Cranberry Salad

Recipe of the Month


Ingredients


½ cup 7-Up
½ cup hot water
1 3oz package raspberry Jell-O
1 can cranberry sauce with berries
1 medium can mandarin orange slices, drained, save juice
1 medium can crushed pineapple, drained, save juice
½ cup pecans, chopped
4oz cream cheese, softened (optional)
Pecans, chopped, to decorate (optional)


Instructions


Bring 7-Up and water to boil. Dissolve Jell-O in 7-Up mixture using a 2-quart casserole dish. Stir in cranberry sauce. Add oranges, pineapple, and pecans. Stir well. Congeal in refrigerator. Optional: Mix the cream cheese with the drained fruit juices. Spread on salad and sprinkle with pecans.
